Ingredients
1 cup fresh spinach, chopped
1 cup feta cheese, crumbled
1/2 cup cream cheese, softened
1/4 cup green onions, finely chopped
1 teaspoon garlic powder
1/2 teaspoon black pepper
4 large flour tortillas
1 tablespoon olive oil (for brushing)
1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the chopped spinach, crumbled feta, softened cream cheese, finely chopped green onions, garlic powder, and black pepper. Stir until well mixed.
- Lay one tortilla flat on a clean surface. Spread a quarter of the spinach and feta mixture evenly over the tortilla, leaving a small border around the edges.
- Starting from one edge, tightly roll the tortilla into a log shape. Repeat with the remaining tortillas and filling.
- Slice each rolled tortilla into 1-inch thick pinwheels and place them cut side up on the prepared baking sheet.
- Brush the tops of the pinwheels lightly with olive oil and sprinkle with grated Parmesan cheese, if desired.
- Bake for 15-20 minutes or until the pinwheels are golden brown and crispy. Remove from the oven and let them cool for a few minutes before serving.
