Description

Spinach and Feta Pinwheels are a savory, creamy snack with a delightful spinach and feta filling wrapped in soft tortillas, baked to golden perfection. These pinwheels are easy to make and perfect for any occasion, offering a burst of flavor with each bite.


Ingredients

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1/2 teaspoon black pepper

4 large flour tortillas

1 tablespoon olive oil (for brushing)

1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the chopped spinach, crumbled feta, softened cream cheese, finely chopped green onions, garlic powder, and black pepper. Stir until well mixed.
  3. Lay one tortilla flat on a clean surface. Spread a quarter of the spinach and feta mixture evenly over the tortilla, leaving a small border around the edges.
  4. Starting from one edge, tightly roll the tortilla into a log shape. Repeat with the remaining tortillas and filling.
  5. Slice each rolled tortilla into 1-inch thick pinwheels and place them cut side up on the prepared baking sheet.
  6. Brush the tops of the pinwheels lightly with olive oil and sprinkle with grated Parmesan cheese, if desired.
  7. Bake for 15-20 minutes or until the pinwheels are golden brown and crispy. Remove from the oven and let them cool for a few minutes before serving.
