Description

A creamy, comforting sweet corn soup made with fresh or frozen corn, sautéed onions, and a velvety broth finished with milk or cream. This easy stovetop recipe is perfect for a cozy meal and can be customized with herbs or heartier ingredients.

Ingredients

Main Ingredients

  • 4 cups corn kernels (fresh, frozen, or canned)
  • 1 tbsp butter
  • 1 small onion, diced
  • 2 cups vegetable or chicken broth
  • 1 cup milk or cream
  • Salt & pepper, to taste

Optional Garnishes

  • Chopped parsley
  • Chopped green onions

Instructions

  1. Sauté onions: Melt the butter in a pot over medium heat. Add the diced onion and cook, stirring occasionally, until the onion becomes soft and translucent, about 5 minutes.
  2. Simmer corn and broth: Add the corn kernels and the vegetable or chicken broth to the pot. Bring the mixture to a simmer and cook for about 10 minutes to allow flavors to meld and to soften the corn.
  3. Blend the soup: Using an immersion blender, blend the soup until smooth or partially blended if you prefer some texture. Be careful when blending hot liquids.
  4. Add milk and season: Stir in the milk or cream to make the soup creamy. Season the soup with salt and pepper according to taste.
  5. Heat gently and serve: Warm the soup gently over low heat, making sure not to boil the milk. Once hot, ladle the soup into bowls and garnish with optional parsley or green onions if desired.

Notes

  • For a heartier soup, add diced potatoes along with the corn before simmering.
  • Use fresh corn in season for the best flavor or frozen corn as a convenient alternative.
  • You can substitute milk with cream for a richer texture or choose a dairy-free milk for a lighter version.
  • Adjust thickness by adding more broth if too thick, or simmering longer to reduce if too thin.
