Ingredients
1 tablespoon olive oil
1 lb ground turkey
1 medium onion, diced
3 cloves garlic, minced
1 large sweet potato, peeled and diced
1 (14.5 oz) can diced tomatoes
1 (15 oz) can kidney beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
2 cups chicken or vegetable broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and pepper, to taste
Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions
Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned, breaking up with a spoon.
Add onion and garlic; sauté until softened, about 3-4 minutes.
Stir in sweet potato, diced tomatoes, kidney beans, black beans, broth, chili powder, cumin, smoked paprika, oregano, salt, and pepper.
Bring to a boil, then reduce heat to low and simmer uncovered for 30-35 minutes, or until sweet potatoes are tender and chili has thickened.
Adjust seasoning to taste. Serve with optional toppings.
