Description

This taco bubble up bake is an easy weeknight casserole made with refrigerated biscuit dough, taco-seasoned beef, salsa, and plenty of melted cheese. It’s bubbly, cheesy, and always a crowd-pleaser!


Ingredients

Ground Beef Mixture:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet taco seasoning (or 2 tablespoons homemade blend)
  • 1/2 cup water

Remaining Ingredients:

  • 1 can (16 oz) refrigerated biscuit dough, cut into quarters
  • 1 cup salsa (or enchilada sauce)
  • 1 can (15 oz) black beans, rinsed and drained (optional)
  • 1 cup frozen corn (optional)
  • 2 cups shredded Mexican blend cheese

Toppings:

  • sour cream
  • shredded lettuce
  • diced tomatoes
  • jalapeños
  • cilantro

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook beef and onion: In a skillet, cook ground beef and onion over medium heat until browned. Drain excess grease.
  3. Add seasoning: Stir in taco seasoning and water; simmer for 2–3 minutes.
  4. Combine ingredients: In a large bowl, combine beef mixture, salsa, beans, and corn. Add quartered biscuit dough pieces and stir to coat.
  5. Prepare baking dish: Pour mixture into prepared baking dish and spread evenly. Sprinkle shredded cheese on top.
  6. Bake: Bake uncovered for 25–30 minutes, until biscuits are cooked through and cheese is bubbly.
  7. Rest and serve: Let rest 5 minutes, then serve with your favorite taco toppings.

Notes

  • Check center biscuits with a toothpick to ensure they’re baked through.
  • Swap salsa for enchilada sauce for a saucier bake.
  • For a lighter option, use reduced-fat cheese and lean ground turkey.
  • Best eaten fresh—biscuits soften if reheated.
