Description

This taco bubble up bake is an easy weeknight dinner made with biscuit dough, taco-seasoned beef, salsa, and melty cheese. A bubbly, cheesy casserole that tastes like tacos in comfort food form!


Ingredients

Ground Beef Mixture:

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water

Additional Ingredients:

  • 1 can (16 oz) refrigerated biscuit dough, cut into quarters
  • 1 cup salsa (or enchilada sauce)
  • 1 cup canned black beans, rinsed and drained (optional)
  • 1 cup frozen corn (optional)
  • 2 cups shredded Mexican blend cheese

Toppings:

  • sour cream
  • shredded lettuce
  • diced tomatoes
  • jalapeños
  • cilantro

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook ground beef: In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add seasoning: Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
  4. Combine ingredients: In a large bowl, combine cooked beef, salsa, beans, and corn (if using). Add quartered biscuit dough pieces and toss to coat.
  5. Prepare baking dish: Pour mixture into prepared baking dish and spread evenly.
  6. Add cheese: Sprinkle shredded cheese on top.
  7. Bake: Bake uncovered for 25–30 minutes, until biscuits are cooked through and cheese is bubbly.
  8. Serve: Let cool slightly, then serve with your favorite taco toppings.
