- 1 teaspoon salt
- 1/2 teaspoon black pepper
Topping:
- 1/2 cup salsa
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
- In a large bowl, combine ground beef, taco seasoning, crushed chips, eggs, salsa, onion, cheese, milk, salt, and pepper. Mix gently until just combined.
- Transfer mixture to prepared loaf pan and shape into a loaf.
- Spread 1/2 cup salsa evenly over the top.
- Bake for 45–50 minutes, until internal temperature reaches 160°F (71°C).

- Let rest 10 minutes before slicing. Serve with extra salsa, sour cream, or guacamole if desired.
Notes
- Swap ground beef for ground turkey or chicken for a lighter version.
- Crushed tortilla chips add authentic taco flavor, but breadcrumbs work in a pinch.
- Leftovers make amazing taco meatloaf sandwiches.
- Can be frozen baked or unbaked—wrap tightly and freeze up to 3 months.
