Description

This taco meatloaf combines the hearty comfort of traditional meatloaf with bold taco seasoning, salsa, and cheese. A Tex-Mex inspired dinner that’s easy to make and always a family favorite!


Ingredients

Meatloaf:

  • 2 lbs ground beef (or a mix of beef and pork)
  • 1 packet taco seasoning (or 2 tablespoons homemade blend)
  • 1 cup crushed tortilla chips (or breadcrumbs)
  • 2 large eggs, beaten
  • 1/2 cup salsa
  • 1/2 cup onion, finely diced
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Topping:

  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
  2. In a large bowl, combine ground beef, taco seasoning, crushed chips, eggs, salsa, onion, cheese, milk, salt, and pepper. Mix gently until just combined.
  3. Transfer mixture to prepared loaf pan and shape into a loaf.
  4. Spread 1/2 cup salsa evenly over the top.
  5. Bake for 45–50 minutes, until internal temperature reaches 160°F (71°C).
  6. Sprinkle cheese over top and bake for another 5 minutes, until melted.
  7. Let rest 10 minutes before slicing. Serve with extra salsa, sour cream, or guacamole if desired.

Notes

  • Swap ground beef for ground turkey or chicken for a lighter version.
  • Crushed tortilla chips add authentic taco flavor, but breadcrumbs work in a pinch.
  • Leftovers make amazing taco meatloaf sandwiches.
  • Can be frozen baked or unbaked—wrap tightly and freeze up to 3 months.
