Description
A comforting British-inspired classic shepherd’s pie featuring savory ground beef and mixed vegetables simmered in a rich tomato and beef broth sauce, topped with creamy mashed potatoes and baked until golden brown. This hearty main dish serves four and is perfect for a cozy family meal.
Ingredients
Meat and Vegetables
- 1 lb ground beef
- 1 cup mixed vegetables (such as peas, carrots, corn)
- 1 small onion, diced
Broth and Sauce
- 1 cup beef broth
- 2 tbsp tomato paste
- Salt & pepper to taste
Topping
- 2 cups mashed potatoes
- 1 tbsp butter
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the shepherd’s pie.
- Cook Beef and Onion: In a skillet over medium heat, brown the ground beef along with the diced onion until the meat is fully cooked and the onion is translucent. Drain excess fat to keep the dish leaner.
- Add Vegetables and Simmer: Stir in the mixed vegetables, beef broth, tomato paste, salt, and pepper. Let the mixture simmer gently for about 5 minutes to blend the flavors and thicken the sauce slightly.
- Assemble in Baking Dish: Spread the meat and vegetable mixture evenly in a baking dish, creating a solid base layer.
- Add Mashed Potato Topping: Spoon the prepared mashed potatoes over the top of the meat mixture, spreading them out evenly to cover completely. Dot the surface with small pieces of butter for richness.
- Bake: Place the assembled shepherd’s pie in the preheated oven and bake for 25 minutes, or until the mashed potato topping is golden brown and the filling is bubbling around the edges.
Notes
- Traditional shepherd’s pie uses lamb, but this recipe uses beef for a common and accessible variation.
- Using leftover mashed potatoes can save prep time and make the process faster.
- Feel free to add Worcestershire sauce or herbs like thyme for extra flavor.
- For a crispier topping, you can broil the pie for 2-3 minutes at the end of baking.
