Description

This creamy broccoli Stilton soup combines earthy broccoli with the tangy richness of Stilton cheese, creating a comforting, flavorful meal that’s both nutritious and easy to prepare.


Ingredients

1 kg (2 lb) fresh broccoli, chopped into florets

200 g (1 cup) Stilton cheese, crumbled

25 g (1 ¾ tablespoon) butter

1 large onion, diced

1 large leek, washed and sliced

2 cloves garlic, minced

1 large potato, peeled and diced

1 litre (4 cups) vegetable stock

200 ml (1 cup) cream

Salt and pepper to taste


Instructions

  1. In a large pot over medium heat, melt the butter.
  2. Add the diced onion, sliced leek, and minced garlic. Sauté until the vegetables become translucent and fragrant.
  3. Stir in the diced potato and combine with the onion mixture.
  4. Pour in the vegetable stock and bring to a simmer. Cook for about 10 minutes or until the potatoes are tender.
  5. Add the broccoli florets and continue simmering for another 10 minutes or until the broccoli is soft.
  6. Remove the pot from heat and stir in the crumbled Stilton cheese and cream. Season with salt and pepper to taste.
  7. Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches using a countertop blender and return the soup to the pot.
  8. Warm the soup on the stove and ladle into bowls. Serve hot.

Notes

  • For a different flavor, try using a sharp cheddar or another blue cheese instead of Stilton.
  • Boost the nutritional value by adding spinach, kale, or other leafy greens.
  • For a vegan version, swap the butter and cream for plant-based alternatives and omit the cheese or substitute with vegan cheese.
