Description
This creamy broccoli Stilton soup combines earthy broccoli with the tangy richness of Stilton cheese, creating a comforting, flavorful meal that’s both nutritious and easy to prepare.
Ingredients
1 kg (2 lb) fresh broccoli, chopped into florets
200 g (1 cup) Stilton cheese, crumbled
25 g (1 ¾ tablespoon) butter
1 large onion, diced
1 large leek, washed and sliced
2 cloves garlic, minced
1 large potato, peeled and diced
1 litre (4 cups) vegetable stock
200 ml (1 cup) cream
Salt and pepper to taste
Instructions
- In a large pot over medium heat, melt the butter.
- Add the diced onion, sliced leek, and minced garlic. Sauté until the vegetables become translucent and fragrant.
- Stir in the diced potato and combine with the onion mixture.
- Pour in the vegetable stock and bring to a simmer. Cook for about 10 minutes or until the potatoes are tender.
- Add the broccoli florets and continue simmering for another 10 minutes or until the broccoli is soft.
- Remove the pot from heat and stir in the crumbled Stilton cheese and cream. Season with salt and pepper to taste.
- Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches using a countertop blender and return the soup to the pot.
- Warm the soup on the stove and ladle into bowls. Serve hot.
Notes
- For a different flavor, try using a sharp cheddar or another blue cheese instead of Stilton.
- Boost the nutritional value by adding spinach, kale, or other leafy greens.
- For a vegan version, swap the butter and cream for plant-based alternatives and omit the cheese or substitute with vegan cheese.
