This walking taco casserole takes everything you love about walking tacos—seasoned beef, beans, cheese, and crunchy chips—and layers them into a hearty baked dish. Perfect for weeknight dinners or game-day gatherings!
Ingredients
Main Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 packet taco seasoning (or 2 tablespoons homemade blend)
- 1/2 cup water
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
- 2 cups shredded cheddar or Mexican blend cheese
- 3 cups corn chips (Fritos) or nacho cheese tortilla chips
Toppings:

- salsa
- jalapeños

- cilantro
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook Beef: In a skillet, cook ground beef and onion until browned. Drain excess grease. Stir in taco seasoning and water; simmer 2–3 minutes. Add beans and diced tomatoes; cook for 5 minutes.
- Layer Casserole: Spread half the crushed chips in the baking dish. Spoon beef mixture over chips, sprinkle with 1 1/2 cups of cheese. Top with remaining chips and cheese.
- Bake: Bake uncovered for 20 minutes until cheese is melted and bubbly.
- Serve: Serve hot with favorite taco toppings.

- Swap beef for shredded chicken or turkey for variety.
