Description

This walking taco casserole takes everything you love about walking tacos—seasoned beef, beans, cheese, and crunchy chips—and layers them into a hearty baked dish. Perfect for weeknight dinners or game-day gatherings!

Ingredients

Main Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet taco seasoning (or 2 tablespoons homemade blend)
  • 1/2 cup water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 3 cups corn chips (Fritos) or nacho cheese tortilla chips

Toppings:

  • shredded lettuce
  • diced tomatoes
  • sour cream
  • salsa
  • jalapeños
  • avocado
  • cilantro

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook Beef: In a skillet, cook ground beef and onion until browned. Drain excess grease. Stir in taco seasoning and water; simmer 2–3 minutes. Add beans and diced tomatoes; cook for 5 minutes.
  3. Layer Casserole: Spread half the crushed chips in the baking dish. Spoon beef mixture over chips, sprinkle with 1 1/2 cups of cheese. Top with remaining chips and cheese.
  4. Bake: Bake uncovered for 20 minutes until cheese is melted and bubbly.
  5. Serve: Serve hot with favorite taco toppings.

Notes

  • Best served fresh so the chips stay crunchy.
  • Swap beef for shredded chicken or turkey for variety.
  • Add corn or bell peppers for extra veggies.
  • To meal prep, assemble casserole without chips, then add chips just before baking.
