Instructions
- Prepare the vegetables: Chop the cabbage, slice the carrots, chop the celery stalks, dice the onion, mince the garlic, chop the zucchini, and chop the red bell pepper as directed to ensure even cooking.
- Combine ingredients in pot: Add all the prepared vegetables into a large pot, then pour in the vegetable or chicken broth along with the diced tomatoes including their juices.
- Add seasonings: Stir in the minced garlic, Italian seasoning, salt, and pepper to the pot, mixing well to distribute the flavors evenly.
- Cook the soup: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and let it cook uncovered for 20–25 minutes, until the vegetables are tender and flavors meld.
- Adjust seasoning and serve: Taste the soup and add additional salt, pepper, red pepper flakes, or a splash of lemon juice if desired. Serve the soup warm for a comforting meal.
