Ingredients
Dry Ingredients
- 1 cup whole wheat flour
- 1 cup rolled oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Wet Ingredients
- 1/3 cup coconut oil or unsalted butter, melted
- 1/3 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
Optional Add-Ins
- Chocolate chips
- Raisins or dried cranberries
- Chopped nuts or seeds
- Unsweetened shredded coconut
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- Mix dry ingredients: In a large bowl, whisk together the whole wheat flour, rolled oats, baking soda, cinnamon, and salt until evenly combined.
- Combine wet ingredients: In a separate bowl, mix the melted coconut oil or butter, honey or maple syrup, egg, and vanilla extract until the mixture is smooth and homogenous.
- Combine wet and dry: Pour the wet ingredients into the dry ingredients and stir gently until just combined; avoid overmixing to keep cookies tender.
- Add optional ingredients: Fold in any optional add-ins such as chocolate chips, raisins, chopped nuts, or shredded coconut for extra flavor and texture.
- Shape cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading. Gently flatten each cookie slightly with your fingers or the back of a spoon.
- Bake cookies: Bake in the preheated oven for 10 to 12 minutes, or until the edges are set but the centers remain soft for that perfect chewy texture.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes to firm up, then transfer them to a wire rack to cool completely before serving or storing.
