Ingredients

For the Soup

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon ground turmeric
  • ½ teaspoon black pepper
  • 8 cups chicken broth
  • pounds bone-in or boneless chicken thighs or breasts
  • 1 cup potatoes, diced
  • 1 cup frozen peas or corn
  • Salt to taste

Optional Add-Ins

  • 1 cup cooked noodles or rice
  • Fresh parsley for garnish


Instructions

  1. Heat the oil: Heat olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Sauté the vegetables: Add diced onion, sliced carrots, and celery to the pot and sauté for 5–6 minutes until they become tender and softened.
  3. Add seasonings: Stir in minced garlic, dried thyme, dried rosemary, ground turmeric, and black pepper. Cook for 30 seconds until fragrant, releasing the herbs’ aroma.
  4. Add broth and main ingredients: Pour in the chicken broth and add the chicken pieces and diced potatoes into the pot.
  5. Simmer chicken: Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 25–30 minutes until the chicken is cooked through and tender.
  6. Shred chicken: Remove the chicken from the pot, shred or chop it into bite-sized pieces, then return it to the soup.
  7. Add vegetables: Stir in the frozen peas or corn and simmer for an additional 5 minutes to heat through.
  8. Season and serve: Taste the soup and add salt as needed. Serve hot, garnished with fresh parsley. Optionally, add cooked noodles or rice during the last 10 minutes of simmering.
