Ingredients
For the Soup
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ½ teaspoon ground turmeric
- ½ teaspoon black pepper
- 8 cups chicken broth
- 1½ pounds bone-in or boneless chicken thighs or breasts
- 1 cup potatoes, diced
- 1 cup frozen peas or corn
- Salt to taste
Optional Add-Ins
- 1 cup cooked noodles or rice
- Fresh parsley for garnish
Instructions
- Heat the oil: Heat olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
- Sauté the vegetables: Add diced onion, sliced carrots, and celery to the pot and sauté for 5–6 minutes until they become tender and softened.
- Add seasonings: Stir in minced garlic, dried thyme, dried rosemary, ground turmeric, and black pepper. Cook for 30 seconds until fragrant, releasing the herbs’ aroma.
- Add broth and main ingredients: Pour in the chicken broth and add the chicken pieces and diced potatoes into the pot.
- Simmer chicken: Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 25–30 minutes until the chicken is cooked through and tender.
- Shred chicken: Remove the chicken from the pot, shred or chop it into bite-sized pieces, then return it to the soup.
- Add vegetables: Stir in the frozen peas or corn and simmer for an additional 5 minutes to heat through.
- Season and serve: Taste the soup and add salt as needed. Serve hot, garnished with fresh parsley. Optionally, add cooked noodles or rice during the last 10 minutes of simmering.
