Filling

Instructions

  1. Prepare the Filling: In a large bowl, combine the shredded chicken, black beans, corn, spinach, red and green bell peppers, green onions, Monterey Jack cheese, cheddar cheese, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix thoroughly to evenly distribute the spices and ingredients.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about ⅓ cup of the filling into the center of the wrapper. Fold the bottom corner over the filling, then fold in both sides tightly. Roll the wrapper firmly toward the top corner. Brush the final corner with beaten egg to seal the edges securely. Repeat with remaining wrappers and filling.
