Ingredients
Wet Ingredients
- 1 cup water
- 1/3 cup molasses
- 2 tablespoons butter
Dry Ingredients
- 1/2 cup cornmeal
- 1 teaspoon salt
- 2 1/4 teaspoons active dry yeast
- 3 cups all-purpose flour
Instructions
- Cook Cornmeal: Bring 1 cup of water to a boil, then stir in 1/2 cup cornmeal. Cook until the mixture thickens, creating a smooth base for the dough.
- Add Sweeteners and Seasonings: Remove the cornmeal mixture from heat and mix in 1/3 cup molasses, 2 tablespoons butter, and 1 teaspoon salt. Allow the mixture to cool until it is warm to the touch but not hot.
- Activate Yeast: Stir 2 1/4 teaspoons active dry yeast into the warm cornmeal mixture until fully combined.
- Form Dough: Gradually add 3 cups of all-purpose flour to the wet ingredients, mixing until a dough begins to form.
- Knead Dough: Transfer the dough to a floured surface and knead for 8 to 10 minutes until it becomes smooth and elastic.
- First Rise: Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for 1 to 2 hours, or until doubled in size.
- Shape Loaf: Punch down the risen dough, shape it into a loaf, and place it into a greased baking pan.
- Second Rise: Allow the dough to rise again in the pan for 30 to 45 minutes until puffed.
- Bake: Preheat the oven to 375°F (190°C) and bake the loaf for 30 to 35 minutes until golden brown and cooked through.
- Cool and Serve: Remove the bread from the oven and let it cool before slicing. Best served warm with butter.
