- 1 cup cherry tomatoes
- 1 zucchini, sliced
Seasonings & Others
- 2 tbsp olive oil
- 1 lemon, sliced
- 1 tsp garlic powder
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat Oven: Preheat the oven to 200°C (400°F) to prepare for baking the cod and vegetables evenly.
- Prepare Vegetables: Arrange the trimmed asparagus, cherry tomatoes, and sliced zucchini in a baking dish. Drizzle with 1 tablespoon of olive oil to coat and help with roasting.
- Add Cod Fillets: Place the cod fillets on top of the arranged vegetables in the baking dish.
- Season: Drizzle the cod with the remaining tablespoon of olive oil, then season both the fish and vegetables with garlic powder, salt, and black pepper evenly for balanced flavor.
- Top with Lemon: Place lemon slices on top of the cod fillets to add a fresh, citrus aroma during baking.
- Bake: Bake the dish in the preheated oven for 18–20 minutes, or until the fish flakes easily with a fork, indicating it is cooked through and tender.
- Garnish and Serve: Remove from oven, garnish with fresh parsley for color and freshness, and serve hot. This pairs well with rice or crusty bread.
Notes
- Substitute cod with haddock or halibut if desired for variation in taste or availability.
- Avoid overcooking the fish to maintain moisture and a tender texture.
- Serve with rice or crusty bread to complement the meal and make it more filling.
