Ingredients

For the Shrimp

  • 1 lb (450 g) large shrimp, peeled and deveined
  • ½ cup buttermilk
  • ¾ cup cornstarch
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Vegetable oil, for frying

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon honey
  • 1 teaspoon fresh lime juice

For Serving

  • 2 green onions, thinly sliced
  • 1 tablespoon chopped fresh cilantro
  • Lime wedges


Instructions

  1. Make the sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Refrigerate until ready to use.
  2. Prepare the shrimp: Pat the shrimp dry with paper towels. Place them in a bowl with the buttermilk and toss gently to coat each shrimp evenly.
  3. Prepare the coating: In another bowl, combine the cornstarch, salt, garlic powder, and black pepper, mixing thoroughly to season the coating evenly.
  4. Coat the shrimp: Remove each shrimp from the buttermilk, allowing excess to drip off, then thoroughly coat the shrimp in the seasoned cornstarch mixture. Shake off any excess coating.
  5. Fry the shrimp: Heat about 1½ inches of vegetable oil in a deep skillet or frying pan to 350°F (175°C). Fry the shrimp in batches, being careful not to overcrowd the pan, for about 2–3 minutes per side or until they turn golden brown and are cooked through.
  6. Drain the shrimp: Use a slotted spoon to transfer the fried shrimp to a paper towel-lined plate or wire rack to drain the excess oil while maintaining their crispiness.
  7. Toss with sauce: Place the crispy shrimp in a large bowl and gently toss with the prepared bang bang sauce until each piece is evenly coated.
  8. Serve: Garnish the shrimp with sliced green onions and chopped cilantro. Serve immediately with lime wedges for squeezing over the top.

Notes

  • Avoid overcrowding the pan when frying so the shrimp remain crispy and cook evenly.
  • For extra heat, increase the amount of sriracha in the sauce to suit your taste preferences.
  • An air fryer alternative: lightly spray the coated shrimp with oil and air fry at 400°F (200°C) for about 8–10 minutes, turning halfway through the cooking time.
