Ingredients
Protein
- 2 lbs (900g) boneless skinless chicken thighs or breasts, cubed
Vegetables & Starch
- 1½ lbs (680g) baby potatoes, halved
Sauces & Oils
- 1 cup (240ml) barbecue sauce
- 2 tbsp olive oil
Seasonings & Herbs
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp chopped parsley
Cheese
- 1 cup (100g) shredded cheddar cheese
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect baking temperature while you prepare the ingredients.
- Prepare Baking Dish: Grease a large baking dish thoroughly to prevent sticking and make cleanup easier after baking.
- Season Potatoes: In a bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and black pepper until they are evenly coated with the seasoning.
- Arrange Potatoes: Spread the seasoned potatoes evenly in the greased baking dish to create a base layer for the casserole.
- Prepare Chicken: Toss the cubed chicken thighs or breasts with the barbecue sauce until well coated, infusing the meat with smoky, tangy flavor.
- Layer Chicken: Place the barbecue-coated chicken pieces over the layer of potatoes in the baking dish.
- Cover and Bake: Cover the baking dish with aluminum foil to retain moisture and bake in the preheated oven for 35 minutes, allowing the chicken and potatoes to cook through.
- Add Cheese: Remove the foil carefully and sprinkle the shredded cheddar cheese evenly over the top of the chicken and potatoes.
- Finish Baking: Return the baking dish to the oven uncovered and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly and the chicken is fully cooked.
- Garnish and Serve: Once baked, garnish the casserole with freshly chopped parsley for a touch of color and freshness before serving.
Notes
- Use your favorite variety of barbecue sauce to customize the flavor—sweet, spicy, or smoky all work well.
