Ingredients
Main Ingredients
- 2 medium sweet potatoes, peeled and diced
- 2 boneless, skinless chicken breasts
- ½ cup BBQ sauce (use gluten-free if needed)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper, to taste
- 1 cup cooked corn kernels
- 1 cup cooked black beans, drained and rinsed
- 1 avocado, sliced
- 2 cups cooked brown rice or quinoa
- ¼ cup chopped fresh cilantro
- 1 lime, cut into wedges
Creamy Dressing (Optional)
- ¼ cup Greek yogurt
- 1 tbsp lime juice
- 1 tsp honey
- Salt and pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
- Roast Sweet Potatoes: Toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them evenly on a baking sheet and roast in the preheated oven for 25–30 minutes, flipping halfway through for even cooking and caramelization.
- Cook Chicken: Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Heat a skillet over medium heat and cook the chicken for 6–7 minutes on each side until fully cooked through and juices run clear.
- Glaze Chicken: Brush the cooked chicken breasts with BBQ sauce, then cook for an additional 1–2 minutes in the skillet to allow the sauce to caramelize slightly. Remove and let rest for 5 minutes before slicing to keep juices intact.
- Prepare Dressing: In a small bowl, whisk together Greek yogurt, lime juice, honey, salt, and pepper until smooth and creamy to add a refreshing element to the bowl.
- Assemble Bowls: Divide the cooked brown rice or quinoa evenly among four serving bowls. Top each bowl with roasted sweet potatoes, sliced BBQ chicken, corn kernels, black beans, avocado slices, and sprinkle with chopped fresh cilantro.
- Serve: Drizzle the creamy lime dressing over the bowls and serve with lime wedges on the side for extra zest.
Notes
- For quicker preparation, substitute with rotisserie chicken instead of cooking chicken breasts yourself.
- Add shredded cheddar cheese for a richer flavor and creaminess.
- Store the components separately in airtight containers for up to 4 days to maintain freshness for meal prep.
- Enhance the heat by adding sliced jalapeños or a dash of your favorite hot sauce to the bowl.
