Instructions
- Prepare the vegetables: Place the chopped tomatoes, sliced cucumber, green bell pepper, thinly sliced red onion, Kalamata olives, and fresh parsley into a large mixing bowl to create the salad base.
- Make the dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, fresh lemon juice, dried oregano, minced garlic, and a pinch of salt and black pepper until well combined.
- Toss the salad: Pour the dressing over the vegetables in the large bowl. Gently toss everything together to ensure all the vegetables are evenly coated with the dressing.
- Add the feta cheese: Place the cubed feta cheese on top of the tossed salad without mixing it in, to preserve its texture and presentation.
