Ingredients
Chicken and Vegetables
- 1½ lbs (680 g) boneless, skinless chicken breasts, sliced thin
- 2 tablespoons vegetable oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 3 garlic cloves, minced
- 1 teaspoon grated fresh ginger
Sauce
- ¼ cup low-sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 2 teaspoons freshly ground black pepper
- 1 tablespoon brown sugar
- ¼ cup chicken broth
Instructions
- Prepare the sauce: In a small bowl, whisk together the low-sodium soy sauce, oyster sauce, cornstarch, freshly ground black pepper, brown sugar, and chicken broth until smooth. Set aside.
- Heat the pan: Place a large skillet or wok over high heat and add the vegetable oil. Heat until shimmering.
- Cook the chicken: Add the sliced chicken breasts to the hot skillet. Stir-fry for 5–6 minutes until the chicken is browned on the outside and nearly cooked through.
- Add vegetables and aromatics: Add the sliced green and red bell peppers, onion, minced garlic, and grated ginger to the skillet. Continue to stir-fry for 3–4 minutes until the vegetables are crisp-tender.
- Add the sauce and finish cooking: Pour the prepared sauce into the skillet. Stir well to combine and cook for another 2–3 minutes until the sauce thickens and the chicken is fully cooked through.
- Serve: Remove from heat and serve the black pepper chicken hot over steamed rice or your choice of noodles for a complete meal.
