Ingredients
Egg Rounds
- 6 large eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1 tbsp butter
Bacon & Toppings
- 8 slices bacon
- 4 large lettuce leaves
- 8 slices tomato
- 1/4 cup mayonnaise
- 4 slices cheddar cheese
Instructions
- Cook Bacon: Heat a skillet over medium heat and cook the bacon slices until they are crispy. Once cooked, transfer the bacon to a plate lined with paper towels to absorb excess grease.
- Prepare Egg Mixture: In a bowl, whisk together the eggs, salt, black pepper, and garlic powder until fully combined and slightly frothy.
- Cook Egg Rounds: Heat butter in a nonstick skillet over medium-low heat. Pour small portions of the egg mixture into the skillet, forming round shapes about the size of a slider bun. Cook the egg rounds until the edges are set and the bottom is lightly golden.
- Flip Egg Rounds: Carefully flip each egg round and cook the other side until fully set and lightly browned. Repeat until all the egg mixture is used and egg rounds are cooked.
- Assemble Sliders: Spread mayonnaise evenly over one side of each egg round. On half of the egg rounds, layer lettuce, tomato slices, crispy bacon, and cheddar cheese. Top with the remaining egg rounds to form sliders.
- Serve or Store: Serve the BLT egg sliders immediately while warm or refrigerate the egg rounds and bacon separately, assembling just before serving to maintain freshness.
Notes
- You can substitute turkey bacon for pork bacon for a leaner option.
- For extra flavor, add sliced avocado or switch mayonnaise with ranch or avocado spread.
- Use Swiss, pepper Jack, or mozzarella cheese as alternatives to cheddar.
- Store egg rounds and bacon separately from fresh lettuce and tomato to maintain texture; refrigerate in airtight containers for up to 3 days.
- Freeze cooked egg rounds and bacon separately if needed; add fresh vegetables after thawing to avoid sogginess.
- Use a good quality nonstick skillet and lightly grease it to prevent egg rounds from sticking.
