Ingredients
For the Loaf:
- 1/2 cup unsalted butter
- 2 cups all-purpose flour
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1/2 cup milk
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups diced apples (firm varieties like Granny Smith or Honeycrisp)
- 1 tsp cinnamon
For the Glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat and Prepare Pan: Preheat your oven to 180°C (350°F) and grease a loaf pan to ensure the bread won’t stick after baking.
- Make Brown Butter: Melt the unsalted butter over medium heat, swirling often, until it turns golden brown and releases a nutty aroma. Remove from heat and let it cool slightly so it doesn’t cook the eggs in the next step.
- Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon until well combined.
- Mix Wet Ingredients: In a separate large bowl, combine the sugars, eggs, milk, vanilla extract, and the slightly cooled brown butter. Whisk until the mixture is smooth and fully blended.
- Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing just until combined to avoid overmixing which can toughen the loaf.
- Fold in Apples: Gently fold the diced apples into the batter, distributing them evenly throughout without breaking them down.
- Bake the Loaf: Pour the batter into the prepared loaf pan, spreading it evenly. Bake in the preheated oven for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Glaze: Let the loaf cool completely in the pan on a wire rack. Meanwhile, prepare the glaze by mixing powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled loaf before slicing and serving.
Notes
- Use firm apples like Granny Smith or Honeycrisp for the best texture and flavor.
- Brown butter adds a deep, nutty flavor that elevates the loaf—don’t skip this step.
- Letting the loaf cool completely before glazing helps the glaze set nicely without melting off.
- For a crunchier texture, sprinkle chopped nuts such as walnuts or pecans over the glaze.
