Ingredients
Chicken and Vegetables
- 2 lbs (900g) boneless skinless chicken breasts, cubed
- 4 cups broccoli florets
Cheese Sauce and Seasonings
- 1 cup (240ml) heavy cream
- 1 cup (100g) shredded cheddar cheese
- ½ cup (50g) grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
Other Ingredients
- 1 tbsp olive oil
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook Chicken: Heat the olive oil in a skillet over medium heat. Add the cubed chicken breasts and cook for about 5–6 minutes, stirring occasionally, until the chicken is lightly browned but not fully cooked through.
- Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant, taking care not to burn it.
- Prepare Casserole Base: Spread the broccoli florets evenly in the greased baking dish. Then layer the partially cooked chicken and garlic mixture over the broccoli.
- Add Cream and Cheese: Pour the heavy cream evenly over the chicken and broccoli. Sprinkle the shredded cheddar cheese, grated Parmesan, onion powder, salt, and black pepper evenly across the top.
- Bake: Place the baking dish in the oven and bake for 25–30 minutes until the casserole is bubbly and the cheese on top is melted and golden brown.
- Rest and Serve: Remove from the oven and let the casserole cool for 5 minutes to set before serving.
Notes
- Using rotisserie chicken instead of cooking raw chicken can save preparation time.
- For a more filling dish, add cooked rice or pasta to the casserole before baking.
- Leftover casserole can be stored in the refrigerator for up to 3 days and reheated before serving.
