Ingredients

Chicken and Vegetables

  • 2 lbs (900g) boneless skinless chicken breasts, cubed
  • 4 cups broccoli florets

Cheese Sauce and Seasonings

  • 1 cup (240ml) heavy cream
  • 1 cup (100g) shredded cheddar cheese
  • ½ cup (50g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Chicken: Heat the olive oil in a skillet over medium heat. Add the cubed chicken breasts and cook for about 5–6 minutes, stirring occasionally, until the chicken is lightly browned but not fully cooked through.
  3. Add Garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant, taking care not to burn it.
  4. Prepare Casserole Base: Spread the broccoli florets evenly in the greased baking dish. Then layer the partially cooked chicken and garlic mixture over the broccoli.
  5. Add Cream and Cheese: Pour the heavy cream evenly over the chicken and broccoli. Sprinkle the shredded cheddar cheese, grated Parmesan, onion powder, salt, and black pepper evenly across the top.
  6. Bake: Place the baking dish in the oven and bake for 25–30 minutes until the casserole is bubbly and the cheese on top is melted and golden brown.
  7. Rest and Serve: Remove from the oven and let the casserole cool for 5 minutes to set before serving.
