Instructions
- Preheat Oven and Prepare Pan: Preheat the oven to 375°F (190°C). Grease a 12-cup muffin pan or line it with paper liners to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, Italian seasoning, garlic powder, salt, and black pepper until evenly combined.
- Mix Wet Ingredients: In another bowl, whisk the eggs, milk, and olive oil until smooth and well blended.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir gently just until combined to avoid overmixing, which can lead to dense muffins.
- Add Cheese and Pepperoni: Fold in the shredded mozzarella cheese and chopped mini pepperoni evenly throughout the batter.
- Fill Muffin Cups: Spoon the batter evenly into the prepared muffin cups, filling each about halfway to leave room for the sauce and more batter.
- Add Pizza Sauce: Place about 1 teaspoon of pizza sauce in the center of each muffin filled halfway with batter.
- Top with Remaining Batter: Gently spoon the remaining batter over the pizza sauce in each muffin cup to cover it.
- Sprinkle Parmesan: Evenly sprinkle the tops of the muffins with grated Parmesan cheese for a savory crust.
