Ingredients

Chicken Mixture

  • 3 cups cooked shredded chicken
  • ½ cup sour cream
  • 1 can diced green chilies (4 oz)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 cup shredded Monterey Jack cheese

Enchiladas

  • 8 flour tortillas (8-inch)
  • 2 cups green enchilada sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese

Garnish

  • Fresh cilantro (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.
  2. Prepare Chicken Mixture: In a mixing bowl, combine the shredded chicken, sour cream, diced green chilies, garlic powder, onion powder, and 1 cup of shredded Monterey Jack cheese. Mix well until fully incorporated.
  3. Prepare Baking Dish: Lightly grease a 9×13-inch baking dish and spread ½ cup of the green enchilada sauce evenly across the bottom.
  4. Assemble Enchiladas: Spoon the chicken mixture evenly onto each flour tortilla. Roll each tortilla tightly and place them seam-side down in the prepared baking dish.
  5. Add Sauce and Cheese: Pour the remaining 1½ cups of green enchilada sauce evenly over the rolled tortillas. Then, sprinkle the remaining Monterey Jack and all the cheddar cheese over the top.
  6. Bake: Place the baking dish in the oven and bake for 25–30 minutes, or until the sauce is bubbly and the cheese is melted and golden brown on top.
