Ingredients
Chicken Mixture
- 2 cups cooked shredded chicken
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt, to taste
- Black pepper, to taste
Quesadillas
- 4 flour tortillas
- 1 1/2 cups shredded cheese (cheddar or mozzarella)
- 1 tablespoon oil or butter
Instructions
- Prepare the Chicken: In a bowl, mix the cooked shredded chicken with ground cumin, paprika, salt, and black pepper until the chicken is evenly seasoned.
- Heat the Skillet: Place a skillet or frying pan over medium heat and add a small amount of oil or butter to coat the surface lightly.
- Assemble the Quesadilla: Place one tortilla in the heated skillet. Evenly spread a portion of shredded cheese over the tortilla, then add the seasoned chicken on top of the cheese. Sprinkle a little more cheese to help bind and cover with a second tortilla.
- Cook the Quesadilla: Allow the quesadilla to cook until the bottom tortilla is golden brown and crispy, and the cheese begins to melt, approximately 3–4 minutes. Carefully flip the quesadilla using a spatula and cook the other side until equally golden and the cheese is fully melted.
- Serve: Remove the quesadilla from the pan and let it cool for a minute before slicing into wedges. Serve warm with your choice of salsa, sour cream, or guacamole.
Notes
- Add diced vegetables such as bell peppers or onions into the filling for extra flavor and texture.
- Serve with your favorite dips like salsa, sour cream, or guacamole to enhance the taste.
- Using leftover cooked chicken can make this recipe quicker and reduce waste.
