Instructions
- Heat olive oil: Warm the olive oil in a large pot over medium heat to prepare for sautéing the aromatic vegetables.
- Sauté onion and garlic: Add the chopped onion and minced garlic to the pot and cook until they become fragrant and translucent, about 3–4 minutes.
- Cook vegetables: Stir in the sliced carrot, chopped celery, and zucchini; cook for another 3–5 minutes to slightly soften the vegetables.
- Add broth and boil: Pour in the chicken broth and allow the mixture to come to a rolling boil, stirring occasionally.
- Simmer soup: Reduce the heat to low and let the soup simmer gently for 15 to 20 minutes to develop flavors and cook the vegetables thoroughly.
- Add shredded chicken: Stir in the cooked shredded chicken and cook for an additional 5 minutes to warm the chicken through.
- Season and serve: Season the soup with salt, pepper, and optional herbs like parsley or thyme to taste. Serve the soup warm for a comforting meal.
