- ½ cup fresh lettuce or spinach
- ½ cucumber, thinly sliced
- 1 small tomato, sliced
- ¼ avocado, sliced (optional)
Instructions
- Drain and Rinse Chickpeas: Thoroughly drain and rinse the chickpeas to remove any canning liquid and excess salt or preservatives.
- Mash Chickpeas: Place the chickpeas in a medium bowl and mash them with a fork, leaving some whole pieces to add texture to the salad.
- Mix Dressing: Add the mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and black pepper to the mashed chickpeas and stir to combine.
- Add Veggies and Herbs: Stir in the finely diced celery, chopped red onion, fresh parsley, and chopped dill pickles until everything is evenly mixed.
- Toast Bread (Optional): Toast the bread slices if you prefer a crispier texture for your sandwich.
- Assemble Sandwich: Spread a generous amount of the chickpea salad over two slices of bread.
- Add Fresh Toppings: Layer the lettuce or spinach, cucumber slices, tomato slices, and avocado if using on top of the chickpea salad.
- Close Sandwich: Cover with the remaining bread slices.
- Serve: Cut each sandwich in half and serve immediately for best taste and freshness.

- Replace mayonnaise with Greek yogurt for a lighter vegetarian version.
- Use vegan mayonnaise to keep the recipe completely plant-based.
- Add chopped walnuts, sunflower seeds, or shredded carrots for extra crunch.
- A pinch of smoked paprika or curry powder adds delicious flavor.
- Store leftover chickpea salad in an airtight container in the refrigerator for up to 4 days.
