Chicken and Broth
- 1 whole chicken (about 3–4 pounds)
- 6 cups water
- 3 slices fresh ginger

Ginger Scallion Sauce
- 1/4 cup finely chopped green onions
- 1 tablespoon grated fresh ginger
- 2 tablespoons hot vegetable oil
- 1 tablespoon soy sauce
- 1/2 teaspoon sesame oil
- Salt to taste
Instructions
- Prepare Poaching Liquid: Place the whole chicken in a large pot. Add 6 cups of water, 3 slices of fresh ginger, 2 green onions, and 1 teaspoon of salt to the pot to create the flavorful poaching liquid.
- Poach the Chicken: Bring the water to a gentle boil over medium-high heat, then immediately reduce the heat to low to maintain a simmer. Let the chicken simmer gently for 30 to 35 minutes, ensuring it cooks fully and remains tender.
- Cool and Chop Chicken: Remove the cooked chicken from the pot and allow it to cool slightly so it can be handled safely. Once cooled, chop the chicken into serving pieces as preferred.
- Make Ginger Scallion Sauce: In a separate bowl, combine 1/4 cup finely chopped green onions and 1 tablespoon grated fresh ginger. Heat 2 tablespoons of vegetable oil until very hot, then carefully pour the oil over the ginger and scallions to release the fragrance.
- Season the Sauce: Stir in 1 tablespoon soy sauce and 1/2 teaspoon sesame oil into the mixture. Add salt to taste and mix well to complete the sauce.
- Serve: Drizzle the ginger scallion sauce generously over the chopped poached chicken. Serve immediately, ideally accompanied by steamed rice and cucumber slices for a refreshing balance.
