Ingredients

Chicken and Broth

  • 1 whole chicken (about 34 pounds)
  • 6 cups water
  • 3 slices fresh ginger
  • 2 green onions
  • 1 teaspoon salt

Ginger Scallion Sauce

  • 1/4 cup finely chopped green onions
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons hot vegetable oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sesame oil
  • Salt to taste


Instructions

  1. Prepare Poaching Liquid: Place the whole chicken in a large pot. Add 6 cups of water, 3 slices of fresh ginger, 2 green onions, and 1 teaspoon of salt to the pot to create the flavorful poaching liquid.
  2. Poach the Chicken: Bring the water to a gentle boil over medium-high heat, then immediately reduce the heat to low to maintain a simmer. Let the chicken simmer gently for 30 to 35 minutes, ensuring it cooks fully and remains tender.
  3. Cool and Chop Chicken: Remove the cooked chicken from the pot and allow it to cool slightly so it can be handled safely. Once cooled, chop the chicken into serving pieces as preferred.
  4. Make Ginger Scallion Sauce: In a separate bowl, combine 1/4 cup finely chopped green onions and 1 tablespoon grated fresh ginger. Heat 2 tablespoons of vegetable oil until very hot, then carefully pour the oil over the ginger and scallions to release the fragrance.
  5. Season the Sauce: Stir in 1 tablespoon soy sauce and 1/2 teaspoon sesame oil into the mixture. Add salt to taste and mix well to complete the sauce.
