Description

A hearty grilled burrito stuffed with seasoned chicken, rice, black beans, cheese, and a smoky chipotle ranch sauce. This satisfying Mexican-inspired meal packs bold flavors and is perfect for a quick and delicious dinner.

Ingredients

Filling

  • 2 cups cooked chicken, shredded or diced
  • 1 cup cooked rice
  • ½ cup black beans, drained and rinsed
  • ¼ cup chipotle ranch dressing (divided)

Toppings and Assembly

  • 1 cup shredded cheddar cheese
  • ½ cup lettuce, shredded
  • ¼ cup diced tomatoes
  • 4 large flour tortillas

Instructions

  1. Warm Tortillas: Warm the flour tortillas in a skillet or microwave until they become pliable and easy to fold without tearing.
  2. Prepare Filling: In a large bowl, combine the cooked chicken, cooked rice, black beans, and half of the chipotle ranch dressing. Mix thoroughly to evenly coat the ingredients.
  3. Assemble Burritos: Divide the filling mixture evenly among the warm tortillas, placing it in the center of each.
  4. Add Toppings: Top the filling on each tortilla with shredded cheddar cheese, shredded lettuce, diced tomatoes, and the remaining chipotle ranch dressing.
  5. Fold Burritos: Fold in the sides of each tortilla and roll them tightly to enclose all the ingredients and form burritos.
  6. Grill Burritos: Heat a skillet or grill pan over medium heat. Place the burritos seam side down and grill for 2–3 minutes per side or until the tortillas are golden brown and crisp, and the cheese starts to melt inside.
  7. Serve: Remove the grilled burritos from the pan and serve warm immediately for the best flavor and texture.

Notes

  • Add sliced avocado or jalapeños for extra flavor and texture.
  • Use brown rice instead of white rice to increase the fiber content.
  • Make sure to wrap the burritos tightly to prevent the filling from spilling out during grilling.
