Ingredients

Pie Crust:

Apple Filling:

  • 6 cups (about 6 medium) apples, peeled, cored, and thinly sliced (Granny Smith + Honeycrisp work well)
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) brown sugar, packed
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Assembly:

  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (optional, for sprinkling)


Instructions

  1. Make the Crust: In a large bowl, whisk together the flour, salt, and sugar. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing just until the dough comes together. Divide dough into two discs, wrap them in plastic, and refrigerate for at least 1 hour to chill.
  2. Prepare the Filling: In a large bowl, combine the thinly sliced apples with granulated sugar, brown sugar, all-purpose flour, ground cinnamon, nutmeg, allspice, lemon juice, and vanilla extract. Toss everything until well coated and let the mixture rest for 15 minutes to allow the flavors to meld.
  3. Assemble the Pie: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out one dough disc into a circle large enough to fit a 9-inch pie pan. Gently transfer the dough to the pie pan and press it into place. Pour the apple filling evenly into the crust. Roll out the second dough disc and place it over the filling. Trim the excess dough, crimp the edges to seal, and cut slits in the top crust to allow steam to escape. Brush the top crust with the beaten egg wash and sprinkle with coarse sugar if desired.
  4. Bake: Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 45–50 minutes, or until the crust is golden brown and the filling is bubbling.
