Ingredients

Instructions
- Heat oil and sauté onion and carrots: In a large pot over medium heat, warm the olive oil. Add the diced onion and carrots and cook for about 5 minutes until they are softened and fragrant.
- Add zucchini and garlic: Stir in the diced zucchini and minced garlic, cooking for an additional 2 minutes to release their flavors without browning.
- Add tomatoes, broth, and seasonings: Pour in the crushed tomatoes, vegetable broth, and tomato paste. Stir in the dried basil, dried oregano, salt, and black pepper until combined.
- Simmer the soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 15 minutes to develop the flavors.
- Cook lasagna noodles in the soup: Add the broken lasagna noodle pieces directly into the simmering soup. Cook uncovered for 10–12 minutes until the noodles are tender but not mushy, stirring occasionally to prevent sticking.
- Prepare cheese topping: In a small bowl, combine the ricotta cheese, shredded mozzarella, and grated Parmesan cheese, mixing well.
- Serve the soup: Ladle the hot soup into bowls and top each serving with a generous spoonful of the cheese mixture. Garnish with fresh basil leaves and serve immediately while warm.
