Ingredients
Salad Ingredients
- 2 cups cooked chicken breast, diced or shredded
- 1 large cucumber, diced
- 2 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
Dressing Ingredients
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
Instructions
- Prepare the Vegetables. In a large bowl, combine the chopped romaine lettuce, diced cucumber, halved cherry tomatoes, thinly sliced red onion, pitted and sliced Kalamata olives, and chopped fresh parsley. Toss gently to mix.
- Add Chicken and Cheese. Add the diced or shredded cooked chicken breast and crumbled feta cheese to the bowl with the vegetables, distributing ingredients evenly.
- Make the Dressing. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, dried oregano, garlic powder, salt, and black pepper until well combined and emulsified.
- Toss the Salad. Pour the dressing over the salad mixture and toss gently but thoroughly until all ingredients are evenly coated with the dressing for consistent flavor.
- Serve or Chill. Serve the salad immediately for freshness, or refrigerate for up to 2 hours to allow the flavors to meld together beautifully before serving.
Notes
- Rotisserie chicken works great for a quick and easy version.
- Add avocado for extra creaminess if desired.
- Store dressing separately if preparing the salad ahead of time to maintain freshness.
- For a lower-carb option, omit the tomatoes.
