Ingredients
Soup Ingredients
- 1 lb (450 g) asparagus, trimmed and chopped
- 1 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- ½ cup heavy cream
- Salt and black pepper to taste
- Fresh chives for garnish
Instructions
- Melt Butter: Melt the butter in a large pot over medium heat to create a flavorful base for the soup.
- Sauté Onion: Add the diced onion to the pot and cook until softened and translucent, about 5 minutes, which brings out its sweetness.
- Add Garlic: Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
- Add Asparagus and Broth: Add the chopped asparagus along with the vegetable broth to the pot.
- Simmer: Bring the mixture to a boil, then reduce heat and let it simmer gently for 15 minutes until the asparagus is tender.
- Blend the Soup: Use an immersion blender to puree the soup until completely smooth and creamy.
- Add Cream and Season: Stir in the heavy cream and season the soup with salt and black pepper to taste.
- Heat Through and Serve: Warm the soup thoroughly, then ladle into bowls and garnish with fresh chives for a bright finish.
Notes
- Reserve a few asparagus tips for garnish to add an elegant touch.
- For a lighter version, substitute milk in place of heavy cream.
- Serve the soup with crusty bread for a delicious complementary side.
