Ingredients

Pasta

  • 8 oz (225 g) pasta (penne or fusilli)

Roasted Feta & Tomato Sauce

  • 8 oz (225 g) block feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Fresh basil, chopped (for garnish)


Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for roasting the feta and tomatoes.
  2. Arrange feta and tomatoes: Place the block of feta cheese in the center of a baking dish and surround it evenly with the cherry tomatoes.
  3. Add seasoning: Drizzle the olive oil over the feta and tomatoes, then sprinkle with the minced garlic, Italian seasoning, salt, and black pepper to enhance the flavors.
  4. Bake: Bake in the preheated oven for 30–35 minutes, until the tomatoes burst and release their juices and the feta becomes soft and creamy.
  5. Cook the pasta: While the feta and tomatoes are roasting, cook the pasta according to the package instructions until al dente. Drain and reserve a little pasta water.
  6. Create the sauce: Remove the baked feta and tomatoes from the oven and mash them together to form a rich, creamy sauce. If the sauce is too thick, loosen it by stirring in a little reserved pasta water.
  7. Toss and serve: Combine the roasted feta tomato sauce with the cooked pasta, tossing well to coat. Garnish with chopped fresh basil and serve immediately for best flavors.
