Ingredients
Chicken
- 4 boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper to taste
Sauce
- 1 cup chicken broth
- ½ cup heavy cream
- 1 tsp dried thyme
- 1 tsp dried parsley
Rice
- 1 cup basmati rice
- 2 cups water
Garnish
- Fresh parsley for garnish
Instructions
- Cook the Rice: Rinse the basmati rice under cold water until the water runs clear. Cook the rice according to the package directions using 2 cups of water until fluffy and tender. Set aside.
- Season the Chicken: Pat the chicken breasts dry and season evenly with garlic powder, onion powder, salt, and black pepper on both sides.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5–6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
- Prepare the Sauce: In the same skillet, pour in the chicken broth and heavy cream. Stir in the dried thyme and dried parsley. Let the mixture simmer gently for 3–4 minutes, stirring occasionally, allowing it to slightly thicken.
- Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet, coating them thoroughly with the creamy herb sauce. Simmer together for an additional 1–2 minutes to meld the flavors and heat through.
- Serve: Spoon the fluffy basmati rice onto plates, place the creamy herb chicken on top or alongside, and garnish with fresh parsley before serving.
Notes
- Add sautéed mushrooms or spinach to the skillet when making the sauce for extra vegetables and flavor.
- For a lighter sauce, substitute heavy cream with half-and-half.
