Description

A rich and luxurious risotto combining tender steak and succulent seafood in a creamy, velvety base. This surf and turf dish delivers bold flavor and restaurant-quality comfort, perfect for a special dinner that impresses with every creamy bite.

Ingredients

Main Ingredients

  • 1 cup Arborio rice
  • 200 g beef steak, cut into small pieces
  • 150 g shrimp or mixed seafood
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Liquids & Fats

  • 4 cups warm beef or chicken broth
  • 2 tablespoons butter
  • 1 tablespoon olive oil

Cheese & Seasonings

  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Sear the Steak: Heat olive oil in a pan over medium-high heat and sear the steak pieces until they are browned on all sides. Remove the steak from the pan and set aside to keep warm.
  2. Cook the Seafood: In the same pan, add the shrimp or mixed seafood and cook until just done, being careful not to overcook. Remove the seafood and set aside with the steak.
  3. Sauté Aromatics: Add the finely chopped onion and minced garlic to the pan and sauté until they become soft and translucent, releasing their fragrant aroma.
  4. Toast the Rice: Add Arborio rice to the pan and stir for 1 to 2 minutes, allowing the rice to lightly toast and absorb the flavors from the pan.
  5. Add Broth Gradually: Start adding the warm broth one ladle at a time, stirring continuously. Allow the liquid to be absorbed before adding more broth, maintaining a gentle simmer.
  6. Cook Until Creamy: Continue this process, stirring often, until the rice is tender and creamy, which should take about 20 minutes. This slow addition allows the starch to release and creates the signature risotto texture.
  7. Finish with Butter and Cheese: Stir in butter and grated Parmesan cheese to enrich the risotto and give it a velvety finish.
  8. Combine Surf & Turf: Return the seared steak and cooked seafood to the pan. Gently mix them into the risotto to warm through without breaking the delicate seafood.
  9. Season and Garnish: Season with salt and freshly ground black pepper to taste. Garnish with freshly chopped parsley before serving to add a fresh, vibrant touch.

Notes

  • Use warm broth throughout to maintain a consistent cooking temperature and avoid slowing down the cooking process.
  • Avoid overcooking the seafood to keep it tender and flavorful.
  • Adding a touch of lemon zest just before serving can brighten the dish and balance the richness.
