Description

A smooth and comforting creamy vegetable soup made with tender vegetables and a rich, velvety texture. Perfect for a cozy lunch or light dinner, this soup blends a variety of fresh vegetables with a touch of cream for a satisfying, flavorful meal.

Ingredients

Vegetables

  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium potato, peeled and diced
  • 1 zucchini, chopped

Liquids & Fats

  • 2 tbsp butter or olive oil
  • 4 cups vegetable broth
  • 1 cup heavy cream or half-and-half

Seasonings

  • 1 tsp dried thyme
  • Salt and black pepper, to taste

Garnish

  • Fresh chives, chopped, for garnish

Instructions

  1. Heat the fat: Heat butter or olive oil in a large pot over medium heat until melted and shimmering.
  2. Sauté the vegetables: Add the diced onion, chopped carrots, celery, potato, and zucchini to the pot. Cook for 5–7 minutes, stirring occasionally, until the vegetables start to soften and the onion becomes translucent.
  3. Add broth and thyme: Pour in the vegetable broth and sprinkle in the dried thyme. Stir to combine all ingredients.
  4. Simmer the soup: Bring the mixture to a boil, then reduce heat to low and let it simmer gently for about 20 minutes or until all vegetables are tender when pierced with a fork.
  5. Blend until smooth: Use an immersion blender directly in the pot to puree the soup until completely smooth and creamy.
  6. Incorporate the cream: Stir in the heavy cream or half-and-half and heat the soup gently over low heat without allowing it to boil to prevent curdling.
  7. Season to taste: Add salt and freshly ground black pepper according to your preference, stirring well to blend the flavors.
  8. Garnish and serve: Ladle the warm soup into bowls, garnish with freshly chopped chives, and serve immediately for a comforting experience.

Notes

  • For a dairy-free version, substitute heavy cream with coconut milk or another plant-based cream alternative.
  • Feel free to add additional vegetables such as broccoli or cauliflower for enhanced flavor and nutrition.
  • Serve this soup with crusty bread, crackers, or a light salad for a complete meal.
