Instructions
- Heat the fat: Heat butter or olive oil in a large pot over medium heat until melted and shimmering.

- Add broth and thyme: Pour in the vegetable broth and sprinkle in the dried thyme. Stir to combine all ingredients.
- Simmer the soup: Bring the mixture to a boil, then reduce heat to low and let it simmer gently for about 20 minutes or until all vegetables are tender when pierced with a fork.
- Blend until smooth: Use an immersion blender directly in the pot to puree the soup until completely smooth and creamy.
- Incorporate the cream: Stir in the heavy cream or half-and-half and heat the soup gently over low heat without allowing it to boil to prevent curdling.
- Season to taste: Add salt and freshly ground black pepper according to your preference, stirring well to blend the flavors.
- Garnish and serve: Ladle the warm soup into bowls, garnish with freshly chopped chives, and serve immediately for a comforting experience.
