  • 1/2 cup shredded carrots

  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil, for cooking

  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 tsp chili crisp or sriracha
  • 1 green onion, sliced


Instructions

  1. Cook the Filling: Heat a skillet over medium-high heat and add the ground pork or chicken. Cook for 4–5 minutes, breaking the meat apart as it cooks until it is no longer pink.
  2. Add Vegetables and Flavorings: Add the finely shredded cabbage, shredded carrots, minced garlic, and grated ginger to the meat in the skillet. Stir-fry the mixture for 2–3 minutes until the vegetables are tender.
  3. Season the Filling: Stir in the soy sauce, sesame oil, and black pepper. Continue cooking until the mixture is well combined and most of the moisture has evaporated, ensuring a savory and firm filling.
  4. Cool the Filling: Remove the skillet from the heat and let the filling cool slightly. This helps in handling and prevents tearing of the rice paper wrappers.
  5. Soften the Rice Paper: Prepare a large plate or cutting board with some warm water. Dip one rice paper wrapper briefly in the water until it becomes flexible but not too soft.
  6. Assemble the Dumplings: Place a small amount of the cooled filling in the center of the softened rice paper. Fold the sides inward and roll tightly, similar to a spring roll. Repeat this process with the remaining wrappers and filling.
  7. Pan-Fry the Dumplings: Heat vegetable oil in a nonstick skillet over medium heat. Cook the dumplings in batches for 2–3 minutes per side, or until each side is golden brown and crispy. Avoid overcrowding the pan to maintain crispness.
