Ingredients
Chicken Bites
- 1½ lbs boneless, skinless chicken breast, cubed
- ½ cup cornstarch
- ½ cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 eggs, beaten
- Vegetable oil, for frying
Thai Sauce
- ¼ cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon sriracha (optional)
For Garnish
- Sesame seeds
- Chopped cilantro
Instructions
- Heat the Oil: Heat vegetable oil in a deep skillet or heavy-bottomed pan to 350°F (175°C) to ensure the chicken fries evenly and develops a crispy crust.
- Prepare Coating Mixture: In a bowl, combine the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper. This mixture forms the light and flavorful crust on the chicken.
- Coat the Chicken: Dip each cubed chicken breast piece into the beaten eggs, then thoroughly coat it in the flour mixture to ensure every bite is crispy when fried.
- Fry the Chicken: Carefully add the coated chicken pieces in batches to the hot oil. Fry for 4–5 minutes per batch until the pieces are golden brown and cooked through. Remove and drain on paper towels.
- Make the Thai Sauce: While frying, whisk together the sweet chili sauce, soy sauce, honey, lime juice, and sriracha (if using) in a bowl to achieve a balanced sweet-spicy flavor.
- Toss Chicken in Sauce: Once all chicken bites are fried, immediately toss them in the prepared Thai sauce to coat evenly without losing their crispiness.
- Garnish and Serve: Sprinkle sesame seeds and chopped cilantro over the sauced chicken bites for a fresh, nutty finish just before serving.
Notes
- For a healthier version, air fry the chicken bites instead of deep frying at 400°F for 12-15 minutes, shaking halfway.
- Serve with steamed jasmine rice or a fresh green salad for a complete meal.
- To maintain maximum crispiness, toss the chicken with the sauce right before serving.
