Instructions
- Prepare Ingredients: Place the boneless, skinless chicken breasts in the crockpot. Add diced carrots, celery, onion, and minced garlic on top of the chicken.
- Add Broth and Seasonings: Pour in the chicken broth over the ingredients. Sprinkle in the dried oregano, dried thyme, bay leaf, salt, and black pepper. Drizzle olive oil over the top.
- Slow Cook the Soup: Cover the crockpot and cook the soup on low heat for 5 to 6 hours, or until the chicken is tender and fully cooked through.
- Shred Chicken: Remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken back into the crockpot.
