Description
Crunchy Ranch Chickpeas are a crispy, savory snack made with roasted chickpeas tossed in ranch seasoning and a few simple spices. They’re easy to make, packed with plant-based protein and fiber, and perfect for snacking, salads, or topping soups.
Ingredients
Chickpeas
- 2 cans (15 ounces each) chickpeas, drained and rinsed
Seasoning
- 1½ tablespoons olive oil
- 1½ tablespoons ranch seasoning mix
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon smoked paprika
- ¼ teaspoon black pepper
- ¼ teaspoon salt, or to taste
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Dry the chickpeas: Drain and rinse the chickpeas thoroughly. Pat them very dry with paper towels, removing as much moisture as possible to help them become extra crispy when roasted.
- Season: Place the dried chickpeas in a bowl and toss with olive oil, ranch seasoning mix, garlic powder, onion powder, smoked paprika, and black pepper until evenly coated.
- Arrange: Spread the seasoned chickpeas in a single layer on the prepared baking sheet, ensuring they are not overcrowded to allow even roasting and crisping.
- Roast: Bake for 25–35 minutes, shaking the baking sheet every 10 minutes to promote even browning and crispiness, until the chickpeas are golden brown and crunchy.
- Cool: Remove the chickpeas from the oven and let them cool completely on the baking sheet. They will become even crispier as they cool down.
- Serve: Enjoy the crunchy ranch chickpeas as a healthy snack or use them as a flavorful crunchy topping for salads, soups, grain bowls, or roasted vegetables.
Notes
- Make sure the chickpeas are very dry before roasting for the best crunch.
- For extra-crispy chickpeas, gently rub them between paper towels to remove some of the loose skins.
- Don’t overcrowd the baking sheet; use two pans if necessary to achieve even roasting.
- Add cayenne pepper or chili powder for a spicy ranch flavor variation.
- Store completely cooled chickpeas in a loosely covered container at room temperature for up to 2 days for the crispiest texture; avoid refrigerating as it softens them.
