Description

A crisp and colorful cucumber and bell pepper salad featuring red onion, cherry tomatoes, fresh parsley, dill, and optional crumbled feta cheese, all tossed in a light and zesty lemon vinaigrette. This Mediterranean-inspired salad is refreshing and perfect as a light side dish or lunch option.

Ingredients

Salad

  • 2 large cucumbers, sliced
  • 2 bell peppers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 1/4 cup crumbled feta cheese (optional)

Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp honey
  • 1/2 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Combine vegetables: In a large bowl, add the sliced cucumbers, thinly sliced bell peppers, red onion, halved cherry tomatoes, chopped parsley, and chopped dill. Gently mix to combine all the fresh ingredients.
  2. Prepare the dressing: In a small bowl or jar, whisk together the extra virgin olive oil, fresh lemon juice, red wine vinegar, honey, dried oregano, salt, and black pepper until the dressing is well emulsified and balanced in flavor.
  3. Toss salad with dressing: Pour the prepared dressing over the bowl of vegetables. Toss gently but thoroughly until all the ingredients are evenly coated with the vinaigrette.
  4. Add feta cheese: If using, sprinkle the crumbled feta cheese evenly over the dressed salad for added creaminess and flavor.
  5. Chill before serving: Cover and refrigerate the salad for 10 to 15 minutes to allow the flavors to meld and the salad to chill for a refreshing taste before serving.

Notes

  • Using different colored bell peppers such as red, yellow, and orange adds visual appeal and sweetness to the salad.
  • Incorporate chickpeas or white beans for added protein and a more filling dish.
  • For extra crunch and texture, sprinkle toasted sunflower seeds on top before serving.
