Description

This Delicious Jasmine Rice with Coconut Milk is a light, fluffy, and flavorful side dish infused with the rich and creamy taste of coconut. Perfectly cooked on the stovetop, it pairs wonderfully with curries, grilled meats, seafood, or any tropical-inspired meals, making your dining experience more aromatic and delightful.

Ingredients

Rice and Liquid

  • 1½ cups jasmine rice
  • 1 cup canned coconut milk (full-fat recommended)
  • 1 cup water

Seasonings and Garnish

  • 1 tablespoon butter or coconut oil
  • ½ teaspoon salt
  • 1 teaspoon sugar (optional)
  • Fresh cilantro or toasted coconut, for garnish

Instructions

  1. Rinse Rice: Rinse the jasmine rice under cold running water until the water runs clear to remove excess starch and prevent clumping during cooking.
  2. Combine Liquids and Seasonings: In a medium saucepan, combine the canned coconut milk, water, butter or coconut oil, salt, and sugar if using. Stir gently to mix.
  3. Bring to Boil: Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to prevent sticking.
  4. Add Rice and Simmer: Stir in the rinsed jasmine rice. Reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15 minutes until the liquid is absorbed and the rice is tender.
  5. Rest the Rice: Remove the pan from heat but keep it covered. Let the rice sit and steam for an additional 10 minutes to finish cooking and become fluffy.
  6. Fluff and Garnish: Use a fork to fluff the rice gently. Garnish with fresh cilantro or toasted coconut before serving.

Notes
