Description
A soft and chewy mochi dessert filled with vibrant dragon fruit puree, offering a naturally sweet flavor and beautiful color. This colorful Japanese treat is easy to make with simple ingredients and a quick microwave cooking method, perfect for a delightful dessert or snack.
Ingredients
For the Mochi:
- 1 cup glutinous rice flour
- 1/4 cup sugar
- 3/4 cup dragon fruit puree
- Cornstarch or potato starch (for dusting)
For the Filling (Optional):
- 1/2 cup whipped cream or sweetened cream cheese
Instructions
- Mix Ingredients: In a bowl, combine 1 cup glutinous rice flour, 1/4 cup sugar, and 3/4 cup dragon fruit puree until you achieve a smooth batter without lumps.
- Microwave First Cycle: Microwave the mixture for 1 minute, then stir thoroughly to ensure even cooking and consistency.
- Microwave Second Cycle: Return the mixture to the microwave and cook for an additional 1 to 2 minutes until it becomes thick, sticky, and chewy in texture.
- Prepare Work Surface: Dust a clean surface generously with cornstarch or potato starch to prevent sticking, then transfer the hot mochi dough onto this surface.
- Cool and Divide: Allow the mochi to cool slightly so it’s easier to handle, then divide the dough into 6 equal portions.
- Shape and Fill: Flatten each portion into a disc shape. If using filling, place a spoonful of whipped cream or sweetened cream cheese in the center of each disc.
- Wrap Mochi: Carefully wrap the mochi dough around the filling, pinching the edges to seal each piece fully and form a smooth ball.
- Final Dusting and Serve: Lightly dust the finished mochi with starch to prevent sticking and serve immediately for best texture.
Notes
- Avoid overcooking the mochi in the microwave to keep it soft and chewy rather than tough.
- Best eaten fresh within 1–2 days for optimal flavor and texture.
- If you don’t have dragon fruit puree, you can blend fresh or frozen dragon fruit until smooth.
- Use gloves or moisten your hands slightly when handling mochi to prevent sticking.
