Ingredients
Chicken & Rice Mixture
- 2 cups cooked chicken, shredded
- 1 cup cooked rice
- 1 cup black beans, rinsed
- 1 cup corn
- 1 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
Topping
- 1 cup shredded cheddar or Mexican blend cheese
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) to ensure it’s at the right temperature for baking the casserole evenly.
- Mix ingredients: In a large bowl, combine shredded chicken, cooked rice, rinsed black beans, corn, salsa, chili powder, garlic powder, cumin, and salt. Stir well until all components are evenly distributed and the spices are incorporated.
- Transfer to baking dish: Pour the mixed ingredients into a baking dish, spreading it out evenly to create a uniform layer for baking.
- Add cheese topping: Sprinkle the shredded cheddar or Mexican blend cheese evenly over the top of the mixture to create a delicious cheesy crust as it bakes.
- Bake the casserole: Place the dish in the preheated oven and bake for 20 to 25 minutes, or until the casserole is thoroughly heated and the cheese on top is melted and bubbly.
- Cool and serve: Remove from oven and let the casserole cool slightly before serving to allow it to set and make serving easier.
