Description

Easy Crock Pot Chicken Tacos feature tender chicken breasts slow-cooked in salsa, taco seasoning, and garlic until juicy and easy to shred. This effortless slow cooker recipe is ideal for making tacos, burritos, taco bowls, or nachos, delivering a flavorful Mexican-inspired meal with minimal prep and cleanup.

Ingredients

Chicken Taco Filling

  • 2 lbs boneless, skinless chicken breasts
  • 2 cups chunky salsa
  • 1 packet (1 oz) taco seasoning
  • 1 (4 oz) can diced green chiles
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • ΒΌ cup chopped fresh cilantro

For Serving

  • 8 small flour or corn tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Shredded cheddar cheese
  • Sour cream
  • Sliced avocado
  • Lime wedges

Instructions

  1. Prepare the slow cooker: Place the chicken breasts in the slow cooker, spreading them evenly to ensure uniform cooking.
  2. Season the chicken: Sprinkle the taco seasoning evenly over the chicken breasts to coat them with flavor.
  3. Add salsa and other ingredients: Pour in the chunky salsa, add the diced green chiles, and minced garlic on top of the chicken.
  4. Cook the chicken: Cover the slow cooker and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is fully cooked and tender.
  5. Shred the chicken: Remove the cooked chicken breasts from the slow cooker and shred them using two forks for a nice, pulled texture.
  6. Mix in lime and cilantro: Return the shredded chicken to the slow cooker and stir in the lime juice and chopped fresh cilantro to brighten the flavors.
  7. Warm tortillas and assemble tacos: Warm the tortillas, then fill each with a generous amount of shredded chicken. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, sliced avocado, and a squeeze of fresh lime for serving.

Notes

  • Chicken thighs can be substituted for breasts to achieve an even juicier result.
  • Leftover shredded chicken is perfect for use in quesadillas, enchiladas, or taco salads, adding versatility to your meal prep.
  • Freeze any cooled, shredded chicken for up to 3 months to enjoy later without losing flavor or texture.
