Instructions
- Heat olive oil: Warm the olive oil in a large pot over medium heat until shimmering to prepare for sautéing the vegetables.
- Sauté vegetables: Add the diced onion, carrot, and celery to the pot and cook for 4–5 minutes, stirring occasionally, until the vegetables are softened and fragrant.
- Add garlic: Stir in the minced garlic and cook for an additional minute, being careful not to let it burn, to develop its flavor.
- Add lentils and spices: Pour in the rinsed lentils, vegetable broth, ground cumin, turmeric, salt, and black pepper. Stir well to combine all ingredients evenly.
- Simmer the soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 25–30 minutes, or until the lentils are tender and the soup has thickened slightly.
- Finish with lemon juice: Remove the pot from heat and stir in the fresh lemon juice to brighten the flavors.
- Garnish and serve: Ladle the soup into bowls and sprinkle with chopped parsley. Serve warm and enjoy your nutritious meal.
