Description

These Easy Pizza Muffins with Biscuits are a quick and delicious cheesy snack made from refrigerated biscuit dough filled with pizza sauce, mozzarella cheese, and mini pepperoni. Baked to golden perfection in a muffin tin, they are perfectly portioned and perfect for lunchboxes, parties, after-school snacks, or easy family dinners.

Ingredients

Pizza Muffins

  • 1 tube refrigerated biscuit dough (8 biscuits)
  • ½ cup pizza sauce
  • 1½ cups shredded mozzarella cheese
  • ½ cup mini pepperoni
  • ¼ cup grated Parmesan cheese
  • ½ tsp Italian seasoning
  • ¼ tsp garlic powder
  • 1 tbsp melted butter
  • Fresh basil (optional, for garnish)

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin to prevent sticking.
  2. Shape Biscuit Cups: Separate the biscuit dough into 8 individual biscuits and gently flatten each one into a small disk.
  3. Form Dough Cups: Press each flattened biscuit gently into the muffin tin cups, shaping them to create small dough cups to hold the filling.
  4. Add Pizza Sauce: Spoon about 1 tablespoon of pizza sauce into each dough cup, spreading it evenly at the bottom.
  5. Fill with Cheese and Pepperoni: Top the sauce with shredded mozzarella cheese and sprinkle mini pepperoni over the cheese.
  6. Season and Add Parmesan: Sprinkle grated Parmesan cheese, Italian seasoning, and garlic powder evenly over each filled biscuit cup.
  7. Seal Edges: Fold or pinch the edges of the biscuit dough slightly over the filling to keep it contained during baking.
  8. Brush with Butter: Brush the exposed dough edges with the melted butter to help achieve a golden, flavorful crust.
  9. Bake: Bake the pizza muffins in the preheated oven for 12–15 minutes or until the biscuits are golden brown and the cheese is melted and bubbly.
  10. Cool and Serve: Allow the muffins to cool in the pan for 5 minutes before carefully removing them. Garnish with fresh basil if desired, and serve warm.

Notes

  • Avoid overfilling the biscuit cups to prevent cheese and sauce from bubbling over during baking.
  • Substitute mini pepperoni with cooked sausage, ham, mushrooms, or diced bell peppers for variety.
  • For extra cheesy muffins, place a small cube of mozzarella inside each muffin before baking.
  • Serve with warm pizza sauce or marinara as a dipping sauce for added flavor.
  • Store leftovers in the refrigerator for up to 3 days; reheat in oven or air fryer for best results.
