Description
A creamy, cheesy queso dip that comes together quickly with melted cheddar cheese, mild spices, and a hint of tomatoes with green chilies. Perfect for parties, snacks, or game day gatherings, this easy stovetop dip pairs wonderfully with chips.
Ingredients
Cheese Base
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
Seasonings & Add-ins
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 cup diced tomatoes with green chilies
- Salt to taste
Instructions
- Melt butter: Melt the butter in a saucepan over medium heat until it starts to bubble gently but not brown, creating a base for the roux.
- Add flour: Stir in the all-purpose flour and cook for about 1 minute, stirring constantly, to cook out the raw flour taste and form a roux.
- Whisk in milk: Gradually pour in the milk while whisking continuously to ensure a smooth, lump-free mixture. Continue cooking until it thickens slightly.
- Add cheese: Stir in the shredded cheddar cheese a handful at a time, allowing it to melt completely and form a creamy sauce.
- Season and add tomatoes: Mix in the garlic powder, chili powder, and diced tomatoes with green chilies. Stir well to combine all flavors.
- Heat through: Continue cooking on low heat, stirring occasionally, until the dip is warm, creamy, and perfectly smooth.
- Serve: Remove from heat and serve immediately with tortilla chips or your favorite dipping snacks.
Notes
- Add cooked ground beef for a heartier, more filling dip.
- Adjust the spice level by adding more chili powder or fresh jalapenos for extra heat.
- Keep the dip warm over low heat to maintain its smooth and creamy texture without burning.
